DELIGHTFUL HOLIDAY SIDE DISH - CANNA MASHED POTATOES

Whipped Garlic and Parmesan Cheesy Mashed Potatoes
For 8 People.
Ingredients:
- 4 pounds (about 8 large) russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 8 cloves of garlic, peeled and minced
- 1/2 cup (1 stick) unsalted butter
- 2 oz of Canna Cafe Butter (40g thc infused, 5g thc per serving)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
1. Place the cubed potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring the water to a boil over high heat, then reduce the heat to medium and simmer for about 15-20 minutes or until the potatoes are tender and easily pierced with a fork.
2. While the potatoes are cooking, melt the regular butter and the Canna Cafe Infused Butter in a small saucepan over low heat. Add the minced garlic and cook for 2-3 minutes until the garlic is fragrant but not browned. Remove from heat and set aside.
3. Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a potato ricer until they're mostly smooth.
4. Pour the garlic-infused butter, heavy cream, and grated Parmesan cheese into the mashed potatoes. Using a hand mixer or a wooden spoon, whip the potatoes until they are creamy and smooth. Add more cream if needed to achieve your desired consistency. Season with salt and freshly ground black pepper to taste. Adjust the seasoning as necessary.
5. Serve the Whipped Garlicky Parmesan Cheese Mashed Potatoes hot. You can garnish them with chopped fresh parsley for a pop of color and extra flavor, if desired.
